Happy Friday Reader! The person in a household who doesn't do the planning, shopping and prepping of meals often doesn't understand why 5:00 can inspire such a sense of panic in even the most experienced cooks. I was trying to explain to my husband this past week why I sometimes struggle with having to decide what to make for dinner EVERY. single. DAY. We're going to celebrate our 42nd wedding anniversary in 2025. We both laughed when I told him that means that by our anniversary, I will have planned and prepared what everyone will eat for dinner 15,330 times! What?!!! No wonder we get so overwhelmed. lol So I hope this week I can take away some of that struggle for you, relieve the panic, and lighten the load even just a little bit. My gift to you is a meal plan for six days, leaving one day to clean up leftovers or to eat out. I'm also including an easy dessert everyone will love eating throughout the week. You've got this! You're a rockstar! One Week Dinner MenuDay One:
With or without the garlic butter sauce, this is one of my favorite ways to prep green beans. And this tuna casserole is just a big comfort food hug. Day Two:
You'll cook your pork loin low and slow in the slow cooker and use it to make BBQ pulled pork sandwiches for dinner tonight. Save the second half of the pork to use in Egg Roll Bowls tomorrow. Day Three:Substitute the leftover pork you cooked yesterday, for the ground pork in this tasty Egg Roll Bowls recipe. Whip up my 5-Minute Stir Fry Sauce to drizzle on the bowls, or buy your favorite bottle of hoisin or sweet & sour sauce instead. Day Four:
Yum! A dinner everyone will rave about that's so easy to prep. Get the potatoes going and then start baking the chicken and making the salad while they cook. You may not get all the chicken baked before supper, but you can toss another sheet pan full in the oven while you do the dishes. Then you've got the meat prepped for the next TWO meals! P.S. Not in the mood to cook 10 lbs of chicken in one night? When you shop this meal plan, buy three rotisserie chickens instead. Eat one tonight with the potatoes and broccoli salad. Shred the other two and refrigerate for the next two meals. Day Five:
Use half the leftover chicken from Day Four to make this quick and easy dinner. Just give it a quick warm-up in the air fryer or microwave and voila! Assemble the tacos in the time it takes to make the tasty Mexican Rice. You can add even more heartiness to the meal by starting a crock pot of the most delicious refried beans you will ever eat when you get up that morning. This is such an economical and scrumptious dinner. You'll want it on repeat this summer. Day Six:
Start with the biscuits and get them in the oven. Then, use the remainder of the leftover chicken to make this quick, easy, bright, and lemony Chicken Pastina Soup for dinner. Round it all out with a tossed salad and you're set. And if bagged salad is easier for you, go for it. I'm not gonna tell. DessertWe definitely don't have dessert every night, but if you like a little something sweet now and again, whip up a batch of these easy, delectable Ranger Cookies. It's a vintage recipe that has stood the test of time. You'll love them! Psssst! Want your cookies to have that picture-perfect melty chocolate on top? Save back a few chocolate chunks or chips and gently press them into the top of each cookie as soon as they come piping hot out of the oven. Drool-worthy!
