Back-to-School Dinners Made Simple: Quick, Cozy Meals for Busy Weeknights

Have you started to make the shift from summer to back-to-school mode? This time of year, we're all looking for ways to enjoy family dinners even when time is short. And if those meals are easy to prep, delicious comfort-food dishes that everyone loves, so much the better!

Here are my suggestions to take some of the stress out of weeknight dinners as we transition back into the school year. Enjoy!

Porcupine Meatballs

Tender, juicy meatballs studded with rice, swimming in tomato gravy. These protein-packed little flavor bombs are a winning weeknight dinner that EVERYONE loves. Serve them over mashed potatoes, rice, pasta or creamy polenta. Plop them into hoagie rolls for sub sandwiches. So many delicious possibilities!

Time Saving Tips for Back-to School

If you have the freezer space, pre-cook and freeze proteins like: Southwest Chicken, Juicy Baked Chicken Breasts, Slow Cooker Chicken Breasts, Ground Beef Taco Meat, Mexican Shredded Beef and Meatballs. Having them pre-cooked and chopped/shredded so they can be quickly added to a recipe for a busy weeknight meal saves so much time. Think about adding them to tacos, casseroles, salads or sandwiches.

— When you think about a meal plan for your week, choose proteins that can do double duty. Cook once and have meat for multiple meals. For instance, toss a pork loin in the crock pot for easy pulled pork sandwiches. Save half the shredded pork for later in the week and use it instead of ground pork in Egg Roll Bowls. Or pile it into Hawaiian rolls and make these easy Cuban Sliders. Or crisp it in a skillet and make Carnitas tacos.
