Resending: I'm Sick and I Don't Feel Like Cooking, What Should I Make?

I apologize for my tardiness with your newsletter. It's been a weird week with me being under the weather.

No new cooking has happened during that time, but I wanted to at least share my "What's for Dinner" feature and how we've been eating while I was sick.

We're eating mostly leftovers and pre-cooked food from the freezer. I had Slow Cooker Chicken Breasts all prepped and frozen to add to recipes.

(My Baked Chicken Breasts recipe works for all of these, too, but this is what I had on hand.) We're using it for easy recipes that come together quickly. First on the list is these scrumptious Creamy Chicken Enchiladas.

Sour Cream Chicken Enchiladas is a personal family favorite recipe. We've been making them for decades.

Pre-prepping a quick batch of creamy chicken enchilada components and storing it all in the fridge means we are five easy minutes from delicious lunches and dinners.

And anybody that can use the microwave is able to make them. I (And you) don't have to do it! These delicious sour cream chicken enchiladas are the perfect quick and easy solution to what’s for lunch or dinner.

We've also been enjoying my short-cut version of my Creamy Chicken and Noodles.

Creamy Chicken and Noodles are tender egg noodles and chunks of chicken smothered in luscious, creamy, chicken broth gravy.

Chicken and Noodles are simple comfort food your family will ask for over and over, again! We love them over mashed potatoes, but you can certainly serve them on their own as a delectable homemade soup.

I used my meal-prepped chicken, boxed chicken broth, frozen noodles and my homemade chicken bouillon powder to make this delicious, homey supper in around 30 minutes!

Chicken Noodle Soup was just what my stuffy head and achy body needed.

The Farmhouse Culture Guide to Fermenting

I love both books. The Food Lab is all the science and how to's of cooking and I've been so keen to learn as much as I can about fermenting. The information and recipes in The Farmhouse Culture Guide to Fermenting is by far the best I've studied. (lol It's the fourth I've read.)

Femented Sauerkraut is coming!

So be on the lookout for a post soon about fermenting sauerkraut. I've done it successfully twice now, shared the how-tos with my daughters and granddaughters at a fun "sauerkraut party" and I'm excited to tell you all about it, too!

This sauerkraut was truly the best I've ever eaten and I've been eating it all my life. The texture and flavor have no comparison to the canned stuff you buy at the store.

All you need is cabbage, salt and patience. (I added my favorite seasonings, too. I'll share those with you.) So watch for it to be coming soon.
