Two New Recipes & Ideas for Next Weeks Dinners

I hope you're enjoying the first days of Spring as much as we are and looking forward to a fun weekend.

I have two new recipes to share this morning. And as always a few ideas for next week's dinners.

What to Eat for Dinner Next Week

It's pretty hectic at our house this time of year. And next week we're going to be traveling out of state for several days.

My mind is going to quick and easy dishes I can make ahead this weekend, and that are affordable, even in our current grocery availability climate.

I'm going to throw a pork loin in the crock pot tomorrow and make some Pork Carnitas.

It's such an affordable way to make enough meat for multiple meals all at once. The lightly spicy, citrusy pork is delicious and translates into several tasty dinner possibilities.

I can slice it thin and eat it as roast with mashed potatoes and broccoli cauliflower salad, or use it in sandwiches like my Cuban Sliders recipe.

Or I can shred them and crisp them up to use in tacos, smothered burritos, enchiladas and quesadillas.

You can substitute them for ground beef in a walking taco casserole or a beef enchilada casserole, or even toss them with BBQ sauce for crazy good pulled pork sandwiches.

Add them to breakfast hash or use them to stuff a baked potato. And lastly, substitute them for chicken in my Creamy Sour Cream Chicken Enchiladas recipe.

Yum! Endless possibilities from one time of cooking and a $12 pork loin.
